Marinating is the process of soaking foods in a seasoned, often acidic, liquid before cooking . It is whereby the acid causes the tissue in the meat to break down, allowing more moisture to be absorbed and giving a juicier end product

Why Marinate?

Marinating is often use to add flavour to the food and to tenderized the tougher cuts of meat. Marinades can be wet or dry and it can be any flavour that you desire.

Importance of Marinating

It is important to bear in mind that marinating is a cooking process (though heat is rarely applied) because similar to all cooking process, we can overdo it.

The marinade can be acidic with ingredients such as vinegar, lemon juice or wine or savory with soy sauce, brine or other sauces. However too much acid or leaving the piece of meat sitting in the acid for a long period of time can be detrimental to the end product. This is because as the enzymes (in the liquid) break down (digest) the proteins in the meat, at the end, it will result into an unpalatable much. Hence a good marinade will have a delicate balance of spices, acids and oil.

Basic Principles of Marinating

The time taken to marinate the meat can vary from a few minutes to several hours or even overnight (refrigerated). The more delicate the protein is the tendency to over things is higher. For example:

  1. Fish or seafood should never be left sitting in the marinade for more than 30 mins (especially if lemon juice is involved)
  2. Red meat on the contrary can sit in the refrigerator all night including chicken and pork (that is if no fruit juices are used in the marinade)


  • Note
  1. If fresh fruit juice is used as the marinade, keep the marinating time to the minimum.
  2. Whatever marinade is used, throw away any uncooked portion when you finished with it.
  3. If the marinade is to be used as an accompanying sauce, heat it till it comes to a boil and that it is at least cooked for 10 mins.
