Marinating Mince Pork

As previously I have written on the topic of marinating, I am going to write on how to marinate mince pork. This is a very easy process and it doesn’t take very long hence it is good for a quick meal.
Ingredients:

150g Lean mince pork
-
1/2tbsp Oyster sauce
-
2tsp Fish sauce
-
1tsp Garlic (mince)
-
1tsp Shallot oil (recipe for shallot oil, click here)

1/2tsp Sesame oil
Method:

Place mince meat into a clean bowl

Combine all the above together
-
Cover and place in refrigerator for 20 to 30 mins.

Note: you do not have to marinate the mince for too long because, since it is mince, it means that the protein in the meat has already relaxed. Therefore, the marinade is more to flavour the meat than tenderise it.

Very Chinese combination.
It’s great, but the fish sauce made me think twice for a while. =)
If you’re looking to make meat balls, consider adding egg whites into it instead of corn flour (or cheat by putting 1/2 tsp into your bowl (picture). With egg whites, the texture is much refined, and is smoother.
Also, you might want to try:
1) Chopped cabbage, onions, celery, chilly, garlic, carrots.
2) Breadcrumbs
3) Cumin powder, tumeric powder, masala salt, paprika powder.
4) Rosemary, tarragon, oregano, applemint, parsley
5) Light shoyu, mirin, fish stock powder, wasabi powder
Or replace pork with:
1) Italian sausages (sweet or spicy)
2) Bratwurst sausages
3) Mixture of corned lamb and beef
