Marinating Chicken Tigh Pieces

  • 5pcs      Chicken thigh fillet (cut to bite size pieces)
  • 2 tsp      Garlic (mince)
  • 1 slice    Ginger (cut)
  • 1 stalk    Spring onion (Chopped)
  • 1 ½ tbsp Oyster Sauce
  • ½ tbsp    Fish Sauce
  • 1tsp       Shallot oil (recipe for shallot oil, click here)
  • ½ tsp    Sesame oil
  • 2 dash   White pepper


  1. Place the chicken into clean bowl.
  2. Combine all the Sauces together.
  3. Bring the mince garlic, ginger, spring onion and pepper together.
  4. Pour all into bowl with chicken pieces.
  5. Mix well, cover, refrigerate and marinate for about 30 mins.

  • Note: Remember to wash and drain dry the chicken thigh fillets before marinating

The next time you’re doing ginger, consider ‘juicing’ it rather than leaving the whole chopped stem there (for marinade), or easier, just slamming it to smash, then pour them in a bag, shake them well and marinade.

Alternatively, you can also try this:
Portions are equal, (1:1:1:1)
1) Garlic (2) Shallots (3) Ginger (4) Spring Onion stems

Fry them in hot oil until brown, with ginger first, shallots, garlic then spring onions. Touch up with some sesame oil and mix it with:

1) Red and green mini chillies
2) Thick soy sauce (sweet) and thin soy sauce (salty)
